Our stated goal is to make clean, low intervention, terroir driven wines
In addition to our flagship Chateau Civrac label, we make a variety of small batch, single vineyard cuvees
CHATEAU CIVRAC
Our flagship Château Civrac label is a well balanced, lightly oaked wine representing the best our terroir has to offer, in hommage to traditional Bordeaux tastes.
Predominantly Merlot (blend varies by vintage)
Hand picked and sorted at optimal maturity
2 day pre-fermentation maceration
Fermented in temperature controlled concrete tanks
Aged 12 months in a combination of clay, oak and concrete
Up to 25 000 bottles per vintage
AMPHORE INDIGENE
Paying due respect to ancestral methods, and with the aim to maximise terroir expression, we select some of the best plots for this vintage.
Fermented and aged in clay amphora, without the aid of commercial yeast or other oenological products.
Extraction is relatively gentle, relying on convection currents and daily punch-downs.
On the completion of alcoholic fermentation, solids are removed and manually pressed before 12 months total ageing in clay
Annual Production: 2 000 bottles
Predominantly Cabernet Franc & Merlot
MALBEC
Our varietal Malbec is a single vineyard cuvee obtained from a small plot of 65 year old vines.
Barrel fermented (Vinification Integrale) in 400l new French oak barrels. Barrels turned daily for gentle extraction, and pressed after 3 weeks. Wine returned to the barrel for 18 months.
Annual Production 1200 bottles.
Honoured to be the sole recipient of a JWWA Sakura Awards Gold medal for a French Malbec in 2023
Full ripe orchard berry & mild black berry fruits. Oak subtly grained in dusty tannins. Full and well integrated wine with a velvety finish.
CABERNET SAUVIGNON
Vinified in small concrete vats and aged for 24 months in 400 litre French oak barrels.
Deep burgundy colour with ruby highlights.
Expressive, deep and complex nose.
Ripe red and black fruits, wild berries, toasted notes on the palate.
