2020 Eriu Cremant

VINTAGE:

The 2020 vintage was marked by early budburst and above average summer temperatures, ending with a dry, hot ripening period. The Cremant selection was harvested on August 25 and 26

VINIFICATION:

Eriu Cremant is a Blanc de Noir dry sparkling wine, 60% Cabernet Sauvignon, 40% Cabernet Franc blend.

Grapes were hand picked in the morning hours and immediately transferred to a portable refrigerated chamber in the field, and later pressed at 4°C.

Alcoholic fermentation was allowed to proceed gently, cooling as necessary to keep fermentation temperatures below 20°C. In the final stages, organic pea protein and bentonite clay were used for fining and colour extraction, helping preserve the integrity of the fruit aromas and resulting in a pleasing golden hue.

The wine is aged 36 months on lies and finished with 0g dosage (Brut Nature)
